 Today I made chicken verde enchiladas!  One of the women I work with was going on and on about how good her 'healthy' version of the dish was, so I am giving it a try.  I haven't been doing a lot of cooking lately, particularly not on a work night, but she said it was easy, so I am giving it a go.  My house smells wonderful right now, and I can't wait for them to be done. :)

Oh, I love substituting yogurt that way. My favorite potato salad is actually a green bean and potato salad, with a greek yogurt and dill dressing, instead of sour cream. Yum!

I love green chicken enchiladas. I usually do more of a green chili gravy and put the sour cream on top.
