Pantry Cooking

We had a goal of making it ten days without grocery shopping, and today we met that goal.  Lar will go out in the next few days, but in the meantime, I made some fabulous chickpea tikka masala:

Lar made naan, so we bailed on making rice, and the dish did not need it.  There were some modifications: I only had 1/2 of a large onion.  Also I didn't have the tomatoes it called for , so I substituted a can of diced, fire-roasted and a can of the costco box of tomato sauce I am still working through.  I used 1 tbls dried cilantro instead of 1/2 cup fresh, but that works in a fairly sauce-y meal.  I absolutely would make this again.

Also Lar replaced the battery in my car so it works again.    The old battery died a couple of weeks ago due to inactivity, and we didn't stress about it since we weren't going anywhere anyway. There's an auto parts store at the bottom of the hill, so Lar placed the order online then drove down today to get curb side delivery.  They popped the new one into the back of Lar's truck, and took the old one for disposal.  Such an quick fix for the problem!
